I would like to thank Ms.Gouri Basak Ghosh for this beautiful recipe which I recreated. I chose the eye level view and used natural light. Pancakes are so mouthwatering that I chose to make a healthy version and skipped oats. Instead added grated carrots.

- 1 cup spinach puree
- 1/2 cup yogurt
- 1/2 cup Besan or chickpea flour
- 1/2 cup rice flour
- 1 medium size carrot grated
- 1 tsp red chilli powder
- 1/2 tsp cumin powder
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1 cup water or as needed to make the batter
- As Per Required Oil to fry
- as per taste Salt
Instructions to make to make Spinach - Carrot Pancake
- Blanch the spinach and make a purée in a blender. Set aside. Grate the carrot
- In a bowl add spinach purée, yogurt, Besan, rice flour, red chilli powder, cumin powder, grated carrot, baking soda, baking powder and salt. Mix well. Add water gradually to make a batter. Batter shouldn’t be too thin or thick. Should be a pouring consistency. Let it rest for 10 mins
- In a pan heat 1 Tbsp oil and heat. Take a ladle of the batter and pour gently. Take the handle of the pan and twirl to spread the oil evenly on the sides. Fry for 2-3 mins and flip gently. Fry for another 2-3 mins. Set aside. Complete the batches
- Plate and add a dollop of hung curd on top and some cherry tomatoes. Take photos in different angles and I loved the eye level view. Enjoy!
