  14. 1 bay leaf (tej Patta)
  15. 1/2 tsp shahi jeera
  16. 1 strand mace(javitri)
  17. 2-3 green Cardamom
  18. 1 small cinnamon stick(dalchini)
  19. 2-4 cloves(laung)
  20. 1 tsp black pepper
  21. 1/4 tsp red chilli powder
  22. to taste Salt
  23. 1/4 cup beaten curd
  24. 8-10 cashews
  25. 2 tbsp ghee/oil

Steps to make to make Soya Biryani

  1. Wash and rinse rice in water 3-4 times soak it in water for around 15mins
  2. Take a boil water add cloves, cinnamon, green Cardamom and salt
  3. Then add rice and cook it till it is 75% cooked..drain the excess water..
  4. While the rice are cooking then prepare the vegetables
  5. Heat ghee/oil in a pan or a pressure cooker add shahi jeera, bay leaf, green Cardamom,cloves and cinnamon..
  6. Then add onions and fry them till they are golden brown
  7. Add the ginger garlic paste and green chilli and fry till it is cooked..Then add salt, black pepper
  8. Now add all the vegetables, soya chunks,paneer and cook them for 2-3mins
  9. Add beaten curd to the vegetables along with 1cup of water..cover the pan and cook for around 5-6 mins..
  10. When the vegetables are cooked add cashews to the gravy..mix well and set the cooked vegetable aside
  11. Divide the gravy and rice into 2parts..add the 1st layer of vegetables at the bottom of a pressure cooker or a deep pan..
  12. Then add a layer of rice and 1/2tsp of biryani masala on top..
  13. Then again make the second layer of vegetables and rice
  14. You can seal the vessel tightly with aluminium foil and place a heavy lid on top..
  15. Cook the biryani on medium heat for 10-15mins..serve hot with boondi Raita..
